Our truffle orchard at Hester Valley is in its early, formative years, with the first of our oak trees planted in July 2023 as part of Stage 1 of the farm’s development. While commercial harvesting is not expected until approximately 2027–2028, we invite guests to experience the land, the orchard, and the process behind growing exceptional truffles from the ground up.

This guided orchard walk offers an insight into truffle cultivation rather than harvesting. Guests will learn how truffle trees are established, how soil health, moisture, climate, and patience all play a role, and why truffle farming is a long-term commitment shaped by restraint rather than force. You’ll see how the orchard has been laid out, how trees are managed organically, and what happens in the years before the first truffle is ever uncovered.

While our trained truffle dog, Leif, is part of the farm, active truffle hunting and harvesting will not take place until the orchard reaches maturity. Instead, this experience focuses on understanding the journey — from planting and inoculation through to what eventually leads to a successful harvest years down the track.

The walk is unhurried and seasonal, designed for those curious about food provenance, regenerative farming, and the slower rhythms of working with land rather than against it. It’s a chance to connect with the story at its beginning, long before the harvest begins.

Future Harvesting Window
Seasonal truffle harvesting is anticipated to commence from 2027–2028, typically during the winter months (June–August), once trees reach suitable maturity. Truffle hunt experiences will be introduced at that time.
